Somehow Din Tai Fung manages to keep a high quality consistency across its chain of restaurants, in Singapore at least. There are one of the earlier adopters of open kitchen concept, letting diners and passer by have a full view of the fresh preparation of their dumplings. Besides their signature dumplings that bursts open with hot soup inside, one of my all time favourite is their egg fried rice with pork chop. Their egg fried rice is close to the emperor style using egg yolks (but some egg whites slipped out on this occasion) and fluffy rice that don’t stick together. As “Uncle Roger” described, it is quite a fuss to make a simple egg fried rice.
Went during lunch hours without reservation. The restaurant was pretty crowded but luckily we managed to get a table with ease. Ordered their famous pork chop fried rice and shrimp fried rice. Rice was light, fluffy and it's flavours were so well balanced. Pork chop was very tender and chewy. Their ???, bean sauce mixed with minced pork was thick and savoury. And not forgetting their signature dish, ??? (steamed pork dumplings) which was one of my favourites too. Overall, we enjoyed all their dishes and the food is definitely worth it.
Love their Hot and Sour Soup! Noodles is very springy, mushroom sauce is nice! Sliced duck is freshly fried.
